Beef Quesadillas with Ricotta

These delightful quesadillas feature your vegetable-infused minced beef base combined with creamy ricotta cheese, all tucked into crispy wholemeal wraps. A delightful meal that’s as easy to make as it is delicious!
Ingredients
- 2 medium wholemeal tortilla wraps
- 1 cup vegetable-infused minced beef base (your special mix)
- 1 cup frozen peas (or any other frozen veggies you wish to add)
- 1 cup ricotta cheese
- 1 tsp chili powder or paprika (optional for heat)
- Salt and pepper to taste
- 2 tbsp oil (for cooking)
- Greek yogurt (for serving)
Instructions
- In a skillet over medium heat, add about 1 tablespoon of oil.
- Once hot, add the vegetable-infused minced beef base. Cook for about 5 minutes, stirring to heat through. Add in the frozen peas and any spice, like chili powder or paprika, if using. Season with salt and pepper to taste; cook for an additional 2-3 minutes until well combined.
- In another skillet, add a little oil and heat over medium heat.
- Place one wholemeal tortilla wrap in the skillet. Evenly spread half of the beef mixture over one half of the tortilla, then spoon half of the ricotta cheese over the beef.
- Fold the tortilla in half, covering the filling. Cook for 3-4 minutes on one side until golden and crispy, then carefully flip and cook on the other side for another 3-4 minutes.
- Repeat with the second tortilla wrap, or if your skillet is large enough, feel free to do both at the same time!
- Once cooked, let them cool for a minute, then cut into wedges. Serve warm with a dollop of Greek yogurt on the side.
