Instructions
- In a large pot or Dutch oven, melt the butter and olive oil over medium heat.
- Add the sliced onions and a pinch of salt. Cook, stirring often, until the onions are caramelized and golden brown, about 30-40 minutes.
- Once the onions are caramelized, add the white wine (if using) and scrape up any brown bits from the bottom of the pot. Let it simmer for a few minutes until reduced by half.
- Stir in the beef broth, thyme, Worcestershire sauce, and season with salt and pepper. Bring it to a gentle boil and then lower the heat. Let it simmer for at least 15 minutes.
- While the soup is simmering, preheat your broiler.
- Place the bread slices on a baking sheet, toast them lightly under the broiler until golden brown, and then remove from the oven.

- Return the bowls to the broiler for 2-3 minutes or until the cheese is bubbly and golden brown. Watch carefully to prevent burning!
