Ingredients:
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 6 tablespoons butter
- 1 large onion, minced
- 4 cloves garlic, minced
- 2 teaspoons ground ginger
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon chili powder
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 cup tomato puree
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste
- Fresh cilantro leaves, for serving
Instructions:

In a large skillet over medium heat, heat up 4 tablespoons of butter and add in minced onions and garlic. Cook until the onions are softened and start to turn golden brown.

Add the chicken pieces to the skillet and cook for about 5-8 minutes or until they start to brown on all sides.

In a separate bowl, mix together all the spices (ginger, cumin, coriander, chili powder, turmeric, and garam masala). Add the spice mixture to the skillet and cook for an additional minute, stirring constantly, to release the flavors.

Pour in the tomato puree and stir to combine. Bring the mixture to a boil and then reduce the heat to a simmer. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.

Once the sauce has thickened, pour in the heavy cream and stir to combine. Let it simmer for another 5-10 minutes, stirring occasionally.
