Story
One evening, I found myself with limited ingredients in the fridge, but that didn't stop me from creating a delicious and satisfying meal. With just a few simple ingredients, I transformed humble noodles into a buttery delight, complemented by a creamy lettuce salad. This recipe is perfect for a cozy dinner for two!
Ingredients
- 8 ounces of noodles (your choice of type)
- 2 tablespoons of unsalted butter
- 1/2 teaspoon of salt, plus more to taste
- 4 cups of lettuce, chopped
- 1/4 cup of mayonnaise
- 1 tablespoon of lemon juice
- Optional toppings for the salad: cherry tomatoes, cucumber, radishes, etc.
Instructions
- Cook the noodles according to the package instructions in a pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the cooked noodles to the skillet and toss them gently to coat them evenly with the butter.
- Season the buttered noodles with salt to taste and continue cooking for another 2-3 minutes, or until the noodles are warmed through.
- While the noodles are cooking, prepare the creamy lettuce salad. In a large bowl, combine the chopped lettuce, mayonnaise, and lemon juice. Mix well until the lettuce is coated in the creamy dressing.
- Taste the lettuce salad and adjust the seasonings with salt if needed.
- Serve the buttered noodles alongside the creamy lettuce salad.
- If desired, garnish the salad with optional toppings such as cherry tomatoes, cucumber slices, radishes, or any other vegetables you have on hand.
Flavor Profile
The buttered noodles are rich and comforting, with a touch of salt to enhance the flavors. The creamy lettuce salad provides a cool and refreshing contrast, with the tanginess of the mayonnaise and a hint of citrus from the lemon juice. It's a simple yet satisfying dinner that will leave you feeling content.
