Cabbage and Bean StirFry

Ingredients
- 2 cups cabbage (shredded)
- 1 can pinto beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 1 onion (sliced)
- 2 cloves garlic (minced)
- 1 carrot (sliced thinly)
- 1 cup spinach (chopped)
- 2 tablespoons oil (olive or vegetable)
- 1 tablespoon soy sauce (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional for a kick)
- 1 teaspoon sesame seeds (optional for garnish)
Instructions
- Heat the oil in a large skillet or wok over medium-high heat.
- Add the sliced onion and minced garlic. Sauté for about 2-3 minutes until they become fragrant and the onion is translucent.
- Add the sliced carrots and shredded cabbage. Stir-fry for about 5 minutes until the cabbage is slightly wilted.
- Add the pinto beans, black beans, and chopped spinach. Stir until everything is well combined.
- Season with soy sauce (if using), salt, pepper, and red pepper flakes (if desired). Stir everything together and cook for another 3-5 minutes until heated through and the spinach has wilted.
- Remove from heat, sprinkle sesame seeds on top if using, and serve warm.
