Chicken and Onion StirFry with Noodles

This delightful stir-fry is a quick and satisfying dish that highlights the tender chicken and savory onions, wrapped in luscious noodles. Perfect for a busy weeknight dinner!
Ingredients
- 2 chicken breasts, sliced thinly
- 2 cups of noodles (your choice: egg noodles, ramen, etc.)
- 1 large onion, sliced
- 2 medium tomatoes, diced
- 1 packet of sazon seasoning
- 1/2 cup milk (optional for creaminess)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional, like parsley or cilantro)
Cooking Instructions

Cook the Noodles: In a pot of boiling salted water, cook the noodles according to the package directions until al dente. Drain and set aside.

Prepare the Chicken: In a pan over medium-high heat, heat 1 tablespoon of vegetable oil. Add the sliced chicken breast and season with salt, pepper, and half of the sazon seasoning. Cook until browned and cooked through, about 5–7 minutes. Remove the chicken from the pan and set aside.

Sauté the Onions: In the same pan, add another tablespoon of oil if needed, and toss in the sliced onions. Cook until they are soft and translucent, about 4–5 minutes.

Add Tomatoes and Chicken: Add the diced tomatoes to the onions and cook for another 2–3 minutes until they soften. Add the cooked chicken back to the pan along with the remaining sazon seasoning. Stir to combine.

Combine with Noodles: Pour in the milk for creaminess, if using, and stir everything together to coat the chicken and veggies. Finally, add the noodles and toss everything until well mixed and heated through.
