Chicken Taco Wraps

Ingredients
- 1 chicken thigh, boneless and skinless
- 1 cup frozen mixed peppers
- 1/2 cup frozen onions
- 1/2 teaspoon garlic powder (or fresh garlic if you have it)
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon olive oil
- Salt and pepper to taste
- 4 tortilla wraps
- 1/2 cup Greek yogurt (for topping)
- Optional toppings: frozen sweet corn, diced tomatoes, or any herbs you love!
Instructions
- Start by thawing your chicken thigh if it's frozen, then cut it into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the frozen onions and mixed peppers. Sauté until they start to soften.
- Add the chicken pieces to the skillet along with garlic powder, soy sauce, Worcestershire sauce, salt, and pepper. Cook until the chicken is fully cooked through and has a lovely golden color, about 6-8 minutes.
- If you like, you can toss in some sweet corn or other veggies at this point and cook for another 2-3 minutes.
- Warm the tortilla wraps in another dry skillet for a minute on each side, just to make them nice and pliable.
- Assemble your taco wraps by placing a generous scoop of the chicken mixture onto each tortilla. Top with Greek yogurt and any additional toppings you fancy.
- Fold in the sides of the tortilla and roll it up tightly.
