Ingredients
- 2 cans chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cinnamon
- Salt and pepper, to taste
Instructions
- In a skillet or instant pot, sauté the onion and red bell pepper until softened, around 3 minutes.
- Stir in the garlic and continue to sauté for another minute.
- Add the chickpeas, diced tomatoes, vegetable broth, turmeric, cumin, smoked paprika, and cinnamon.
- Bring to a boil.
- Simmer for at least 20 minutes in a pot or for 5-7 minutes in an instant pot.
- Season with salt and pepper to taste.
