Chitlins and Collard Greens

Ingredients
- 2 pounds chitlins, cleaned and prepared
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- 4 cups collard greens, chopped (stems removed)
- 4 cups chicken or vegetable broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Hot sauce (optional, for serving)
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and red pepper flakes, cooking for another 1–2 minutes until fragrant.
- Add the cleaned chitlins to the pot and pour in the broth. Bring to a simmer and cook for about 30 minutes, allowing the flavors to combine.
- Gradually add the chopped collard greens to the pot, stirring well to incorporate. Cover and cook for an additional 30-45 minutes, until the greens are tender and the chitlins are cooked through.
- Stir in the apple cider vinegar and smoked paprika, seasoning with salt and pepper to taste.
- Serve hot, with a dash of hot sauce if desired, for an extra kick!
