Chocolate Chip Cookie Dough Truffles

These chocolate chip cookie dough truffles are the perfect no-bake treat that gives you all the deliciousness of cookie dough, wrapped in luscious chocolate. They're a hit for every occasion!
Ingredients

For the Cookie Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (heat-treated for safety, see note)
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips

For the Coating:
- 1 cup semisweet chocolate chips
- 1 teaspoon coconut oil (or vegetable shortening) (optional)
Instructions

Prepare the Cookie Dough:
- In a medium bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
- Mix in the vanilla extract.
- Gradually add in the heat-treated flour and salt, mixing until combined. (To heat-treat flour, spread it out on a baking sheet and bake at 350°F (175°C) for 5-10 minutes, then cool before using.)
- Fold in the mini chocolate chips until evenly distributed.

Form the Truffles:
- Take small portions of the cookie dough (about 1 tablespoon each) and roll them into balls. Place them on a baking sheet lined with parchment paper. Once all the dough is formed, place the baking sheet in the freezer for about 15-30 minutes to firm up the truffles.

Melt the Chocolate:
- In a microwave-safe bowl, melt the semisweet chocolate chips and coconut oil (if using) in 30-second intervals in the microwave, stirring in between, until completely smooth.

Coat the Truffles:
- Remove the chilled cookie dough balls from the freezer. Dip each ball into the melted chocolate, using a fork to lift it out and allowing excess chocolate to drip off.
- Place the coated truffles back on the parchment-lined sheet. For added decoration, you can sprinkle a few mini chocolate chips or sea salt on top of each before the chocolate sets.

Set the Truffles:
- Refrigerate the truffles for about 30 minutes, or until the chocolate is fully set.
