Chocolate Coconut Protein Bar with Vanilla and Cocoa

These delightful protein bars are a perfect blend of flavors, combining the rich taste of cocoa with the sweetness of vanilla and coconut. They are still keto and diabetic-friendly, making them a great snack or post-workout refuel!
Ingredients:
- 1 cup almond flour
- 1/2 cup vanilla protein powder
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsweetened coconut flakes
- 1/2 cup natural peanut butter
- 1/4 cup Swerve (erythritol sweetener)
- 1/4 cup coconut oil, melted
- 1/2 tsp vanilla extract
- Pinch of salt
- Optional: 1/4 cup chopped nuts (e.g., almonds or walnuts) or seeds (e.g., chia or flaxseeds) for added texture
Cooking Instructions:
- Preheat your oven to 350°F (175°C) and line a square baking dish (8x8 inches) with parchment paper for easy removal.
- In a large mixing bowl, combine the almond flour, vanilla protein powder, cocoa powder, coconut flakes, Swerve, and salt. Mix well until it's evenly distributed.
- In another bowl, mix the melted coconut oil, peanut butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. If you'd like, fold in the chopped nuts or seeds at this stage.
- Transfer the mixture to the lined baking dish and press it down evenly to form a solid layer.
- Bake in the preheated oven for about 15-20 minutes or until golden and slightly firm.
- Once baked, remove from the oven and let it cool completely in the dish. Once cool, cut into bars and store in an airtight container in the refrigerator.
