Ingredients
- 200g dark chocolate (around 70% cocoa)
- 3 eggs, separated
- 1/4 cup sugar
- 1 cup heavy cream
- 1/2 tsp vanilla extract
- A pinch of salt
- 1/3 cup crushed pistachios (plus extra for garnish)
Instructions
- Melt the Chocolate: In a heatproof bowl, melt the dark chocolate gently over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- Prepare Egg Yolks: In a separate bowl, whisk the egg yolks and sugar until light and creamy. Add the melted chocolate and vanilla extract, mixing well until combined.
- Whip the Cream: In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the chocolate mixture.
- Whip Egg Whites: In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the chocolate mixture, taking care not to deflate the air.
- Add Pistachios: Gently fold in the crushed pistachios until evenly distributed.
- Chill: Spoon the mousse into serving bowls or glasses. Refrigerate for at least 2 hours until set.
- Garnish: Before serving, sprinkle extra crushed pistachios on top for a lovely crunch!
