- 1 ½ cups Bob's Red Mill gluten-free all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsweetened applesauce
- ⅓ cup pure maple syrup (you can reduce it a bit if desired)
- 2 large eggs
- ¼ cup unsweetened almond milk (or your preferred milk)
- ¼ cup chopped pecans
- Confectioner’s sugar, for dusting (optional)
Cooking Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, and salt.
- In another large bowl, mix the applesauce, maple syrup, eggs, and almond milk until well combined.
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined (do not overmix!).
- Carefully fold in the chopped pecans.
- Evenly fill each muffin cup with batter, filling them about ¾ of the way full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack.
- If desired, dust with confectioner's sugar before serving for a festive touch!
