Ingredients
- 1 cup shortening
- 1 cup corn syrup
- 1 cup brown sugar, packed
- 2 ½ cups all-purpose flour
- 1 tablespoon ground cinnamon (plus extra for sprinkling)
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the shortening, corn syrup, brown sugar, and vanilla extract until smooth.
- In another bowl, whisk together the flour, ground cinnamon, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined.
- Fold in the chopped pecans.
- Using a tablespoon, scoop out cookie dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.
- Once out of the oven, sprinkle a little extra cinnamon on top while they're still warm.
- Optional: Dust with powdered sugar for a lovely presentation.
