- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1 tablespoon ground cinnamon
- 2 tablespoons brown sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with the sour cream. Begin and end with the flour mixture, mixing until just combined.
- In a small bowl, mix together the ground cinnamon and brown sugar.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-brown sugar mix over the batter. Spoon in the remaining batter and top with the remaining cinnamon-brown sugar mix. Use a knife to gently swirl the cinnamon mixture into the top of the batter.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before inverting onto a wire rack to cool completely.
