- 2 tablespoons tomato paste
- 1 cup beef broth
- 1/2 cup red wine (optional, or substitute with more broth)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1 bay leaf
- Fresh basil, for garnish
- Grated Parmesan cheese, for serving
- Fresh pasta (like tagliatelle or fettuccine)
Cooking Instructions
- Heat olive oil in a large skillet or saucepan over medium heat.
- Add chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Increase the heat to medium-high and add the beef mince. Cook until browned, breaking it apart with a spoon.
- Stir in the crushed tomatoes, tomato paste, and beef broth. If using red wine, add it now.
- Season with dried oregano, basil, salt, and pepper. Toss in the bay leaf for extra flavor.
- Bring to a simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. For richer flavor, let it cook for up to 2 hours, adding a splash of broth if it gets too thick.
- While your sauce simmers, cook your pasta according to package instructions until al dente. Drain and reserve some pasta water.
- Toss the pasta with the Bolognese sauce, adding a little pasta water to achieve your desired consistency.
- Serve with fresh basil and a generous sprinkle of grated Parmesan cheese on top.
