Classic Chocolate Whoopie Pies

For the cakes:
- 1 cup all-purpose gluten-free flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup coconut sugar
- 1/2 cup coconut milk (you can also use almond milk)
- 1/3 cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar

- 1/2 cup coconut cream (chilled)
- 1/4 cup powdered coconut sugar (or a sugar substitute of your choice)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the gluten-free flour, cocoa powder, baking soda, salt, and coconut sugar until well combined.
- In a separate bowl, mix the coconut milk, vegetable oil, vanilla extract, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix!
- Drop tablespoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the tops spring back when gently pressed. Remove from the oven and let them cool completely on a wire rack.
- While the cakes are cooling, prepare the filling. In a mixing bowl, combine the chilled coconut cream, powdered coconut sugar, vanilla extract, and a pinch of salt. Whip until smooth and creamy.
- Once the cakes are cool, spread a generous amount of the filling on the flat side of one cake and top it with another, creating a sandwich.
- Repeat until all cakes are filled.
