Classic GlutenFree Beef Stew

There's nothing quite like the comforting aroma of beef stew simmering on the stove. This classic recipe makes use of hearty vegetables and savory beef, perfect for a cozy meal.
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tablespoons garlic and onion infused olive oil
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth (ensure gluten-free)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 2 tablespoons corn starch
- 4 tablespoons cold water
Instructions:
- In a large pot or Dutch oven, heat 2 tablespoons of garlic and onion infused olive oil over medium-high heat.
- Season the beef cubes with salt and pepper, then add them to the pot. Sear the beef until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same pot, add the remaining tablespoon of garlic and onion infused olive oil.
- Stir in the tomato paste, thyme, and bay leaf, cooking for another minute.
- Return the beef to the pot and add the carrots, potatoes, and beef broth. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beef is tender.
- In a small bowl, mix the corn starch with cold water until smooth. Once the stew is done simmering, stir the corn starch mixture into the stew.
- Cook for an additional 5-10 minutes, stirring periodically until the stew has thickened.
- Taste and adjust seasoning with salt and pepper, if needed.
- Serve hot, garnished with fresh parsley.
