Ingredients
- 29 tablespoons milk powder
- 7 tablespoons all-purpose flour
- 2 tablespoons baking soda
- 2 tablespoons cardamom powder
- 7 tablespoons ghee (clarified butter) or unsalted butter, melted
- 14-18 tablespoons milk (as needed)
- Oil for deep frying
- 29 tablespoons sugar
- 29 tablespoons water
- 1 tablespoon rose water (optional, for fragrance)
- A pinch of saffron strands (optional, for flavor)
Cooking Instructions
- In a large bowl, combine the milk powder, all-purpose flour, baking soda, and cardamom powder.
- Add the melted ghee and mix well until crumbly.
- Gradually add milk to the mixture, just enough to form a smooth dough. It should be soft but not sticky.
- Cover the dough and let it rest for about 15-20 minutes.
- Meanwhile, prepare the sugar syrup by combining sugar and water in a saucepan. Bring it to a boil and let it simmer for about 5-7 minutes until slightly thickened. Add the rose water and saffron. Set aside to cool.
- Heat oil in a pan on medium heat for deep frying.
- While the oil is heating, divide the dough into small portions (about the size of a marble) and roll them into smooth balls, making sure there are no cracks.
- Once the oil is hot, gently drop the balls in. Fry them on low heat until they turn golden brown, making sure to turn them occasionally for even cooking.
- Remove the fried Gulab Jamun and immediately soak them in the warm sugar syrup. Let them sit for at least 30 minutes to absorb all that lovely syrup.
- Serve warm or at room temperature, garnished with a sprinkle of cardamom or nuts if you like!
