Classic Lentil Vegetable Soup

This comforting lentil soup is perfect for chilly days. It’s brimming with vegetables and packed with protein, all while being low in calories. It’s simple, nourishing, and will warm your heart!
Ingredients
- 1 cup green or brown lentils, rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juices
- 6 cups vegetable broth (low-sodium)
- 1 teaspoon dried thyme
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 cups spinach (fresh or frozen)
- 1 tablespoon olive oil
- Optional: juice of 1 lemon
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the lentils, diced tomatoes, vegetable broth, dried thyme, and cumin. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
- If using fresh spinach, stir it in during the last 5 minutes of cooking. If using frozen, add it just a minute before serving to heat through.
- Optionally, squeeze in the juice of one lemon just before serving for a bright finish.
