Ingredients
- 3-4 pounds beef round top roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 cup beef broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 potatoes, chopped
Cooking Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix olive oil, minced garlic, salt, black pepper, rosemary, and thyme to create a herb paste.
- Rub the herb paste all over the beef round top roast.
- Place the roast in a large roasting pan. Surround it with the quartered onion, chopped carrots, and potatoes.
- Pour the beef broth into the pan.
- Cover the roasting pan with aluminum foil and roast in the preheated oven for about 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove the foil and let it roast for an additional 20-30 minutes to develop a nice crust.
- Once cooked to your preference, take it out of the oven and let it rest for at least 15 minutes before slicing. Serve it up with the roasted veggies.
