Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup molasses
- 1 large egg
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- Sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the molasses and egg until well combined.
- In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll the dough into balls about the size of a tablespoon, then roll them in sugar.
- Place the cookie balls on a baking sheet lined with parchment paper, leaving about 2 inches of space between each.
- Bake for 8-10 minutes, or until the edges are set and the tops are lightly cracked.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
