Coconut Cream Pea Curry with Broccolini Beets Ginger and Onions

Ingredients
- 1 cup green peas (fresh or frozen)
- 1.5 cups coconut cream
- 1 cup broccolini, chopped
- 1 cup beets, peeled and diced (or roasted)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated (or minced)
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon curry powder (adjust to taste)
- Salt and pepper to taste
- Optional: Fresh cilantro for garnish
- Optional: Cooked rice or naan for serving
Cooking Instructions
- If you’re using raw beets, boil or roast them until tender. Set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Stir in the minced garlic and grated ginger; cook for an additional minute until fragrant.
- Add the curry powder and stir for about 30 seconds to release its flavors.
- Pour in the vegetable broth and bring to a boil. Stir in the broccolini, green peas, and cooked beets.
- Reduce heat and let the mixture simmer for about 10-15 minutes, allowing the flavors to meld and the vegetables to cook through.
- Stir in the coconut cream and season with salt and pepper to taste. Simmer for another 5 minutes until heated through.
- Serve hot, garnished with fresh cilantro if desired, over cooked rice or with naan.
