- 2 boneless, skinless chicken breasts
- 2 bell peppers (any color, sliced)
- 1 medium onion (sliced)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Grated parmesan cheese (for topping, optional)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced onion and bell peppers, and sauté until they are soft and slightly caramelized, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Season the chicken breasts with paprika, salt, and pepper, and place them on top of the sautéed vegetables in the skillet.
- Pour the heavy cream and chicken broth over the chicken and veggies. Sprinkle the dried Italian herbs on top.
- Bring the mixture to a gentle simmer, then cover the skillet with a lid or foil and transfer it to the preheated oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- If using, sprinkle grated parmesan cheese on top and return to the oven (uncovered) for an additional 5 minutes until the cheese is melted and bubbly.
- Serve hot, garnished with fresh parsley, over rice, pasta, or with crusty bread.
