Creamy Chicken and Broccoli Casserole

Ingredients
- 2 chicken breasts, cubed
- 1 cup broccoli florets
- 1 yellow onion, diced
- 1 red onion, diced
- 1 bell pepper, chopped
- 1 can (14 oz) coconut milk
- 1 cup canned tomatoes, drained (or use diced fresh tomatoes)
- 1 cup grated Parmesan cheese
- 2 cups cooked rice (regular or sushi rice)
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- Salt and pepper to taste
- Optional: 1 teaspoon garlic powder, 1 teaspoon onion powder, fresh herbs for garnish (like parsley or thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, heat the olive oil. Add the diced yellow and red onions, and bell pepper. Sauté until soft and translucent, about 5 minutes.
- Add the cubed chicken to the skillet. Season with salt, pepper, garlic powder, and onion powder (if using). Cook until the chicken is no longer pink, about 7-10 minutes.
- Stir in the broccoli florets and cook for another 3-4 minutes until they are bright green.
- Pour in the drained tomatoes, coconut milk, soy sauce, and oyster sauce. Stir well to combine and let it simmer for a few minutes.
- In a large casserole dish, combine the cooked rice and the chicken-broccoli mixture. Mix until everything is well incorporated.
- Top with grated Parmesan cheese, spreading it evenly over the surface.
- Bake uncovered in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly before serving. Garnish with fresh herbs if desired.
