Cook the rice: In a pot, bring 2 cups of water to a boil. Add the rice, a pinch of salt, and reduce the heat to low. Cover and simmer for about 15-18 minutes, or until the rice is cooked through and fluffy.
Sauté the vegetables: In a large skillet, melt the butter over medium heat. Add the chopped onion, and sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until fragrant.
Prepare the chicken stomachs: Add the cleaned chicken stomachs to the skillet, season with salt and pepper, and cook until they are browned and cooked through, about 6-8 minutes. Make sure to stir occasionally so they don't stick.
Create the creamy sauce: Lower the heat and add the cream cheese to the skillet, stirring until it melts and combines with the vegetables and chicken. If the sauce is too thick, you can add a splash of water to reach your desired consistency.
