Creamy Garlic Tuscan Chicken

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions:
- Season the chicken breasts generously with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown, about 5-7 minutes on each side. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- Stir in the spinach and cook until wilted, about 1-2 minutes.
- Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese until melted and creamy.
- Return the cooked chicken to the skillet, nestling it into the sauce. Allow it to cook for another 5 minutes until the chicken is heated through.
- Taste and adjust seasoning if necessary. If you'd like it to be extra creamy, feel free to add more cream or cheese!
- Serve warm, garnished with fresh basil if desired.
