Creamy Mushroom Risotto

This risotto is a classic Italian dish that brings together creamy arborio rice and the rich, earthy flavors of mushrooms. It’s perfect for a cozy dinner and brings a lovely warmth to the evening.
Ingredients
- 1 cup arborio rice
- 4 cups vegetable or chicken broth
- 1 cup white wine (optional; can replace with more broth)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (any variety you prefer)
- 1/2 cup grated Parmesan cheese (optional for garnish)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Cooking Instructions
- In a medium saucepan, heat the broth over low heat. Keep it warm throughout the cooking process.
- In a large skillet, add the olive oil and butter over medium heat. Add the onions and garlic, sautéing until softened, about 3-4 minutes.
- Stir in the sliced mushrooms and cook until they're browned and tender, approximately 5-6 minutes.
- Add the arborio rice to the skillet, stirring to coat the grains for about 1-2 minutes until lightly toasted.
- Pour in the white wine (if using), stirring constantly until it's mostly absorbed by the rice.
- Begin adding the warm broth, one ladle at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding the next ladle, about 18-20 minutes total, until the rice is creamy and al dente.
- Season with salt and pepper to taste. If desired, stir in Parmesan cheese for extra creaminess.
- Serve hot, garnished with chopped parsley.
