Creamy Ricotta Chicken Wrap

This recipe brings together tender chicken and colorful veggies all wrapped up in a delicious, warm tortilla. It's easy to make and packed with flavor!
Ingredients
- 2 cups frozen mixed peppers
- 1 cup frozen broccoli
- 1 cup frozen cauliflower
- 1 cup frozen sweet corn
- 1 cup frozen onions
- 2 cups chicken thighs, diced
- 1 cup ricotta cheese
- 1 teaspoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 large tortilla wraps
- Olive oil for drizzling
- Optional: Greek yogurt for serving
Cooking Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a little olive oil over medium heat. Add the diced raw chicken thighs and cook for about 5-7 minutes, until they're starting to brown.
- Add the frozen mixed peppers, onions, broccoli, cauliflower, and sweet corn to the skillet. Stir well and cook for another 5-7 minutes until everything is heated through and the chicken is fully cooked.
- Stir in the ricotta cheese, Worcestershire sauce, soy sauce, garlic powder, onion powder, paprika, salt, and pepper. Mix well, cooking for another 2 minutes until the mixture is creamy and well combined.
- Take a tortilla wrap and spoon some of the chicken and veggie mixture in the center. Fold in the sides and roll it up tightly. Repeat with the remaining wraps.
- Place the wraps seam-side down in a baking dish. Drizzle with a little olive oil.
- Bake in the preheated oven for about 10-12 minutes, until the wraps are warm and slightly crispy.
- Serve with a dollop of Greek yogurt on the side for that extra creaminess!
