Creamy Tomato Soup

This soup is perfect for a cozy night in. The addition of cream cheese makes it extra creamy and delicious.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cans (28 ounces) whole peeled tomatoes
- 2 cups chicken or vegetable broth
- 1/4 cup cream cheese
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the canned tomatoes and their juice, breaking the tomatoes up with a wooden spoon.
- Add the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 20 minutes.
- Use an immersion blender or transfer the soup to a blender and puree until smooth.
- Return the soup to the pot and stir in the cream cheese until melted and combined.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with fresh basil if desired.
