Creamy Tuna Pasta

- 1.5 lbs chickpea pasta (or any pasta you have on hand)
- 2 cans tuna, drained
- 1 can diced tomatoes
- 1 can crushed tomatoes
- 1 cup of frozen spinach (or any other frozen veggie you prefer)
- 1 cup mayonnaise
- 2-3 cloves minced garlic
- 1 onion, chopped (sweet or green)
- 1-2 tsp dried oregano or Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- Optional: Grated cheese or nutritional yeast for topping

Cook the Pasta: Bring a large pot of salted water to a boil. Add the chickpea pasta and cook according to package instructions until al dente. Drain and set aside.
