Crispy Baked Tofu with StirFried Vegetables

This recipe combines crispy baked tofu with a colorful array of stir-fried vegetables, creating a healthy and flavorful dish that's perfect for dinner.
Ingredients:
- 1 block of firm tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the soy sauce, cornstarch, garlic powder, paprika, and ground ginger. Add the tofu cubes and toss to coat evenly.
- Place the tofu cubes on the prepared baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until the tofu is golden and crispy.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the bell peppers, zucchini, broccoli, garlic, and green onions. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Add the baked tofu to the skillet with the vegetables and stir to combine. Season with salt and pepper to taste.
- Serve the crispy baked tofu and stir-fried vegetables on a platter, garnish with sesame seeds if desired, and enjoy!
