- 1 Tbsp Lemon Pepper seasoning
- 1/2 tsp salt
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 2 Tbsp olive oil or vegetable oil (plus extra for frying)
- Lemon wedges, for serving
For the fries:
- 3-4 large russet potatoes
- 1 Tbsp garlic powder
- 1/2 tsp salt
- 2 Tbsp Olive oil
Instructions
For the fish:
- Pat the fish dry with paper towels and season with salt and lemon pepper seasoning.
- Place the flour in a shallow bowl. In another bowl, beat the eggs.
- In a third bowl, combine the panko breadcrumbs and a pinch of salt.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Dredge each fish fillet in the flour, shake off any excess, dip in the egg, and finally coat with the panko mixture. Make sure the entire fillet is coated.
- Fry the fish in the hot skillet for 3-4 minutes per side, until golden and crispy. Remove the fish from the skillet and place on a paper towel-lined plate to drain any excess grease.
- Serve hot with lemon wedges on the side.
For the fries:
- Preheat oven to 450°F.
- Cut the potatoes into thin french fries and place them in a large bowl.
- Toss the fries with the olive oil, garlic powder, and salt until well coated.
- Spread the fries out in a single layer on a baking sheet.
- Bake for about 25-30 minutes, flipping occasionally, until golden brown and crispy.
- Remove fries from the oven and serve hot alongside the fish.
