These tacos are a fun twist on traditional flavors, featuring crispy fried tilapia paired with a zesty slaw that adds crunch and heat. Perfect for taco night!
Ingredients
- 2 tilapia fillets
- 1 cup cornmeal (or panko breadcrumbs for extra crunch)
- 2 teaspoons ground cayenne pepper (adjust to taste)
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 tablespoon vegetable oil (for frying)
- 4 small corn or flour tortillas
- 1 cup green cabbage, finely shredded
- 1 cup carrots, grated
- 1 tablespoon mayonnaise (or a vegan alternative)
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Fresh cilantro for garnish (optional)
Cooking Instructions
- In a bowl, mix together the cornmeal, cayenne pepper, black pepper, paprika, and garlic powder.
- Pat the tilapia fillets dry and cut them into strips. Dredge the fish strips into the cornmeal mixture, coating them thoroughly.
- In a large skillet, heat the vegetable oil over medium heat. Once hot, fry the tilapia strips for about 3-4 minutes on each side until they are golden and crispy. Remove and let them rest on a paper towel-lined plate.
- In a separate bowl, combine the shredded cabbage, grated carrots, mayonnaise, lime juice, and chili powder. Toss well to combine, making sure all the vegetables are coated.
- To assemble the tacos, warm the tortillas in a dry skillet until they're pliable. Place a few crispy tilapia strips in each tortilla and top with the spicy slaw.
- Garnish with fresh cilantro if you like, and serve immediately.
