Easy Fried Rice with Leftover Rice

Ingredients
- 3 cups cooked rice (preferably chilled)
- 2 eggs, beaten
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup frozen peas, thawed
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (optional)
- Chopped scallions (optional, for garnish)
Instructions

In a large non-stick skillet, heat the vegetable oil over medium-high heat.

Add the diced onions and carrots to the skillet, and cook for 2-3 minutes until they are soft and slightly browned.

Add the minced garlic and cook for another 30 seconds until fragrant.

Add the beaten eggs to the skillet, and stir gently until they are scrambled and cooked.

Add the rice to the skillet and stir to combine with the vegetables and eggs.
