Exotic Meat Shawarma with a Layer of Foie Gras

This stunning shawarma features a tantalizing blend of wild boar, bison, lamb, and beef, with a luxurious layer of foie gras added just before serving. It’s a perfect way to create an elegant yet hearty dish.
Ingredients
For the Marinade:
- 1/4 pound foie gras, sliced (to be used as a topping)
- 1/2 pound wild boar, finely sliced
- 1/2 pound bison, finely sliced
- 1/2 pound lamb, finely sliced
- 1/2 pound beef, finely sliced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground paprika
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
For Serving:
- Pita bread or flatbreads
- Fresh vegetables (tomato, cucumber, onion)
- Tahini sauce or garlic sauce
- Fresh herbs (parsley or mint)

Prepare the Marinade:
- In a large bowl, combine minced garlic, cumin, coriander, paprika, cinnamon, cayenne, olive oil, lemon juice, salt, and black pepper. Mix well.
- Add the wild boar, bison, lamb, and beef to the marinade, ensuring all the meat is well-coated. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for the best flavor.

Cook the Shawarma:
- Preheat your grill, stovetop grill pan, or skillet over medium-high heat.
- Cook the marinated meats in batches, starting first with the wild boar and bison, followed by lamb and beef, until they are nicely browned and cooked through (about 5-7 minutes per batch). Be careful not to overcrowd the pan for optimal searing.

Prepare the Foie Gras:
- In the same skillet or a separate pan, sear the slices of foie gras for about 30 seconds on each side or until golden but still tender. Set aside.

Assemble the Shawarma:
- After cooking, let the meats rest for a couple of minutes. Slice them further if desired.
- Serve the meats on warm pita or flatbreads and layer the crispy and tender foie gras on top.
