Extra Spicy Harissa

This version of harissa is fiery and packed with flavor, perfect for those who can handle the heat!
Ingredients
- 12-15 dried red chilies (such as arbol, bird’s eye, or any hot variety)
- 4-6 fresh red hot chili peppers (such as habanero or serrano for added heat, adjust based on your tolerance)
- 4-6 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika (optional, for flavor)
- 1 teaspoon caraway seeds (optional)
- 1 tablespoon tomato paste (optional, for sweetness and depth)
- 1-3 teaspoons cayenne pepper or ground chili flakes (adjust based on your desired spice level)
- 1/4 cup extra virgin olive oil (more if needed for consistency)
- Salt to taste
- Lemon juice to taste (optional, for brightness)
Cooking Instructions

Soak the Dried Chilies:
- Remove the stems and seeds of the dried chilies. Soak them in hot water for about 20-30 minutes until they are soft. Drain and reserve a bit of the soaking liquid.

Blend the Ingredients:
- In a food processor, combine the softened dried chilies, fresh hot chili peppers, minced garlic, ground cumin, ground coriander, smoked paprika, caraway seeds, tomato paste (if using), cayenne pepper or chili flakes, and a pinch of salt.
- Add the olive oil and blend until you achieve a smooth paste. If the mixture is too thick, add a small amount of reserved soaking liquid to help blend.

Adjust Consistency and Flavor:
- Taste the harissa and adjust seasoning, adding more salt or lemon juice for brightness as desired. If you want even more heat, you can blend in additional cayenne pepper or chili flakes to suit your spice tolerance.

- Transfer the harissa to a clean jar. Cover the top with olive oil to help preserve it. Store in the refrigerator for up to 2 weeks.
