Extra Spicy Stovetop Mac and Cheese

Ingredients
- 12 oz elbow macaroni
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 1 habanero pepper, seeded and chopped
- 2 tsp cayenne pepper
- 2 tsp paprika
- Salt and pepper, to taste
Instructions

Cook the macaroni according to package instructions in a large pot of salted boiling water.

While the macaroni is cooking, make the cheese sauce:

Melt the butter in a medium saucepan over medium heat.

Add the flour and whisk until smooth.

Cook for 1-2 minutes, whisking constantly, until the mixture turns a light golden brown color and starts to smell nutty.

Gradually whisk in the milk, making sure to whisk out any lumps.

Cook, whisking constantly, until the sauce thickens and coats the back of a spoon, about 4-5 minutes.

Add the cayenne pepper, paprika, salt, and pepper to the sauce.

Once the macaroni is cooked, drain it and return it to the large pot.

Add the habanero and cheese sauce to the pot with the macaroni and stir until the pasta is coated evenly.

Serve hot, garnished with additional habanero if desired.
