Ingredients
- 3 cups cooked rice (preferably day-old)
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 1/2 onion, diced
- 1 lb large shrimp, deveined and peeled
- 2 eggs, lightly beaten
- 1 cup chopped pineapple chunks
- 1/2 cup frozen peas
- 2 tbsp soy sauce
- 1 tbsp fish sauce (optional)
- 1 tsp sugar
- salt and pepper, to taste
- 2 green onions, thinly sliced (optional garnish)
- fresh cilantro, chopped (optional garnish)
Instructions

Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and onion, and sauté for 1-2 minutes until fragrant.

Add the shrimp and cook until no longer pink, about 2-3 minutes. Push the shrimp to one side of the pan and pour in the beaten eggs. Scramble the eggs until just set, then stir everything together.

Add the cooked rice, pineapple chunks, and frozen peas. Stir everything together until the rice is evenly coated in the flavors.

Drizzle the soy sauce and fish sauce (if using) over the rice, along with the sugar. Season with salt and pepper, to taste.

Serve hot, garnished with sliced green onions and fresh cilantro.
