Flourless Peanut Butter Chocolate Chip Cookies

A delicious and healthy take on the classic chocolate chip cookie, made without any flour or artificial sweeteners.
Ingredients:
- 1 cup natural peanut butter
- 1 egg
- 1/2 cup pure maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, egg, maple syrup, and vanilla extract. Use a hand mixer or a whisk to blend the ingredients together until smooth.
- Add in the baking soda and salt, and mix well.
- Stir in the chocolate chips and gently mix until they are evenly distributed.
- Use a cookie scoop or spoon to scoop out small balls of dough onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly with the back of a fork.
- Bake the cookies for 12-15 minutes, until the edges start to turn golden brown.
- Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Store the cookies in an airtight container at room temperature for up to 5 days.
