- In a mixing bowl, combine the flour, sugar, chia seeds, baking powder (if using), and salt.
- In another bowl, whisk together the milk, eggs, and melted butter until well combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
- Let the batter sit for about 5-10 minutes. This allows the chia seeds to absorb moisture and create a lovely fluffy texture.
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
- For each pancake, pour about 1/4 cup of batter onto the hot skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown on the other side.
- Remove pancakes to a warm plate and repeat with the remaining batter.
