Fluffy Pancakes

These pancakes are soft, fluffy, and oh-so-delicious. Perfect with syrup, fruit, or simply sprinkled with sugar!

Ingredients

• 1 cup milk
• 1 tablespoon sugar
• 1 cup all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 tablespoon vegetable oil or melted butter
• Optional: 1/2 teaspoon vanilla extract for added flavor

Instructions

1. In a large mixing bowl, combine milk and sugar. Mix well.
2. In another bowl, sift together the flour, baking soda, and salt.
3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. It’s okay if there are a few lumps! Do not overmix.
4. Stir in the oil (or melted butter) and vanilla extract if you're using it.
5. Heat a non-stick skillet or griddle over medium heat. Once hot, lightly grease it with butter or oil.
6. Pour about 1/4 cup of batter onto the skillet for each pancake. Allow them to cook for about 2-3 minutes until bubbles form on the surface.
7. Flip the pancakes and cook for another 1-2 minutes until golden brown.
8. Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
