Fluffy Pancakes

These pancakes are soft, fluffy, and oh-so-delicious. Perfect with syrup, fruit, or simply sprinkled with sugar!
Ingredients
- 1 cup milk
- 1 tablespoon sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil or melted butter
- Optional: 1/2 teaspoon vanilla extract for added flavor
Instructions
- In a large mixing bowl, combine milk and sugar. Mix well.
- In another bowl, sift together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. It’s okay if there are a few lumps! Do not overmix.
- Stir in the oil (or melted butter) and vanilla extract if you're using it.
- Heat a non-stick skillet or griddle over medium heat. Once hot, lightly grease it with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Allow them to cook for about 2-3 minutes until bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
