Ingredients

For the Biga:
- 1 1/2 cups (180g) bread flour
- 1/2 cup (120ml) water, at room temperature
- 1/4 tsp instant yeast

- 3 1/4 cups (400g) bread flour
- 1 1/2 cups (360ml) water, at room temperature
- 2 1/2 tsp fine sea salt
- 1 1/2 tsp granulated garlic
- 2 tbsp Italian seasoning
- 1/3 cup (80ml) olive oil (plus more for drizzling)
- Fresh rosemary leaves for topping

Prepare the Biga:
- In a bowl, combine bread flour, water, and instant yeast. Mix until combined.
- Cover with plastic wrap and let it sit at room temperature for about 12 to 16 hours.

Make the Dough:
- In a large mixing bowl, combine the biga, bread flour, water, salt, garlic, Italian seasoning, and olive oil. Mix until a shaggy dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth, or use the folding method.
- Place the dough in an oiled bowl, cover with plastic wrap, and let it rise for 2 hours or until doubled in size.

Shape and Rise:
- After the first rise, transfer the dough to a floured surface. Gently stretch and fold the dough to form a rectangle.
- Place the dough into a well-oiled baking pan (35x40 cm) and gently stretch it to the edges if needed.
- Cover the pan and let it rise again for 1 hour.

- Preheat your oven to 425°F (220°C).
- Once risen, use your fingers to dimple the surface of the dough.
- Drizzle with olive oil and sprinkle fresh rosemary leaves on top.
