Garlic and Herb Spinach Stuffed Mushrooms

These delightful stuffed mushrooms are bursting with flavor, thanks to the fresh garlic, aromatic herbs, and savory spinach. Perfect for entertaining or a delicious family meal!
Ingredients
- 12 large cremini or white mushrooms, stems removed
- 2 cups fresh spinach, chopped
- 3 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs (panko works great)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Cooking Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
- In a bowl, combine the sautéed spinach mixture, breadcrumbs, grated Parmesan, oregano, thyme, salt, and pepper. Mix well to combine.
- Brush the mushroom caps with the remaining tablespoon of olive oil and place them on a baking sheet, hollow side up.
- Stuff each mushroom cap generously with the spinach filling.
- Bake in the preheated oven for about 20 minutes or until the mushrooms are tender and the tops are golden brown.
- Remove from the oven, let cool slightly, and garnish with fresh parsley if desired.
