Prueba Chef IA GratisMarinate the chicken (5 minutes active). Pat chicken dry and season lightly with salt and pepper. In a small bowl mix 2 tbsp soy sauce, half the minced garlic, and the optional 1 tsp sugar or honey. Rub marinade over the thighs and let sit while you prep — even a few minutes helps the flavor.
Start the rice pan (2 minutes prep). If your rice is clumpy, break it up with your fingers or a fork so it’ll fry evenly. Beat the eggs lightly in a bowl and have the broccoli and sliced onion/scallions ready.
Sear the chicken (10–12 minutes). Heat 1 tbsp vegetable oil in a large skillet over medium-high. When shimmering, add thighs skin-side down (if skin-on). Sear undisturbed 4–5 minutes until deeply golden, then flip and cook another 4–5 minutes. Lower heat to medium, add the reserved marinade around the chicken, cover, and cook 4–6 more minutes until internal temp reaches 165°F (or juices run clear). Remove chicken to a plate and tent with foil to rest.
Quick-steam broccoli while chicken rests (3–4 minutes). In the same pan or a small pot, add broccoli with 2–3 tbsp water, cover, and steam 2–3 minutes until bright green and just tender. Drain and set aside. (You can also blanch in boiling water.)
Make the fried rice (6–8 minutes). Wipe the skillet clean and return to medium-high. Add butter or 1 tbsp oil. Sauté remaining minced garlic and sliced onion/scallions 30–45 seconds until fragrant. Push to one side, pour beaten eggs into the pan and scramble gently until just set. Add rice, breaking up any clumps, and spread to let it sit 30–60 seconds so it gets a little toasty. Stir in steamed broccoli, 1–2 tsp soy sauce (to taste), and a drizzle of sesame oil if using. Taste and adjust seasoning.
Finish and plate (1–2 minutes). Slice or arrange chicken over the fried rice. Spoon any juices from the resting chicken over the top. Sprinkle with extra scallions or red pepper flakes if you like a little heat.
Serve warm with love. This feeds two nicely — the rice soaks up the garlicky soy juices and the broccoli keeps it bright. If you want a saucier chicken, after searing deglaze the pan with 1/4 cup water and a splash more soy and reduce briefly before returning chicken to finish.
