Ginger Lime Pork Chops with Creamy Coconut Rice

Ingredients
For the Ginger Lime Pork (for 14 pork chops):
- 14 thin-sliced pork chops
- 6 tablespoons fresh ginger, minced
- 6 garlic cloves, minced
- Zest and juice of 4 limes
- 6 tablespoons soy sauce (low-sodium, if possible)
- 3 tablespoons honey or maple syrup
- 6 tablespoons olive oil
- Salt and pepper, to taste
- Fresh cilantro or green onions, for garnish
For the Coconut Rice:
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 tablespoon sugar (optional)
- Salt, to taste
Instructions
For the Ginger Lime Pork:
- In a bowl, mix the minced ginger, minced garlic, lime zest, lime juice, soy sauce, honey, olive oil, salt, and pepper to create a marinade.
- Place the pork chops in a large zip-lock bag or a shallow dish and pour the marinade over them. Make sure all the pork is coated well. Let them marinate for at least 30 minutes (or longer for more flavor, up to overnight in the refrigerator).
- Preheat a grill pan or grill over medium heat. Cook the pork chops for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks. Remove from heat and let rest.
For the Coconut Rice:
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and a pinch of salt. Bring to a gentle boil.
- Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes, or until the liquid is fully absorbed and the rice is tender. Remove from heat and let it sit covered for 10 minutes.
- Fluff the rice with a fork before serving.
