Ingredients:
- 2 cups cooked chicken, shredded or diced
- 6-8 pigs in blankets, sliced into pieces
- 2 cups cooked rice (make sure it's gluten-free)
- 1 bell pepper, sliced (any color you like)
- 1 cup snap peas or green beans
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced (optional)
- 3-4 tablespoons gluten-free soy sauce or tamari
- 1 tablespoon sesame oil (or any cooking oil you prefer)
- Salt and pepper, to taste
- Sesame seeds for garnish (optional)
- Green onions, chopped for garnish (optional)
Cooking Instructions:
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 30 seconds, until fragrant.
- Toss in the sliced pigs in blankets and cook for 2-3 minutes until lightly browned.
- Add the bell pepper and snap peas (or green beans) to the skillet and stir-fry for another 3-4 minutes until they're tender-crisp.
- Stir in the cooked chicken and rice, mixing everything well.
- Drizzle the gluten-free soy sauce over the stir-fry. Stir to combine and heat everything through. Season with salt and pepper to taste.
- Serve hot, garnished with sesame seeds and chopped green onions if desired.
