Optional backstory: I used to make these for hungry grandchildren after school; a warm patty, melty cheese, and a crisp leaf of lettuce makes everything right again.
Ingredients:
- 2 slices white bread
- 1 beef patty (about 4–6 oz)
- 1 slice tasty cheese (or similar)
- 1 leaf of lettuce, rinsed and patted dry
- 1 tablespoon tomato sauce
- 1/2 onion, thinly sliced
- Salt and freshly ground black pepper
- 1 tablespoon butter or oil for cooking
- Optional: a splash of Pepsi (see notes below) and any condiments you like
Instructions:

Prep:
- Season the beef patty on both sides with a pinch of salt and a good grind of black pepper.
- Separate the onion halves; thinly slice half the onion.

Cook the onions (optional but lovely):
- Heat a small skillet over medium heat with 1 teaspoon butter or oil.
- Add the sliced onion and a pinch of salt. Sauté until softened and lightly golden, 5–8 minutes. If you like a touch of sweetness, splash a teaspoon of Pepsi into the pan near the end and cook off the fizz to glaze the onions.

Cook the patty:
- In the same skillet, add a little more butter or oil and raise heat to medium-high.
- Add the beef patty and cook about 3–4 minutes per side for medium (adjust time for thickness and doneness preference).
- In the final minute of cooking, place the slice of tasty cheese on the patty and cover the pan briefly so the cheese melts nicely.

Toast the bread:
- Meanwhile, butter one side of each bread slice lightly and toast in a separate pan or the oven until golden and slightly crisp.

Assemble:
- Spread the tablespoon of tomato sauce on one slice of toasted bread.
- Place the cheesy beef patty on top.
- Add the sautéed or raw sliced onion as you prefer.
- Top with the lettuce leaf.
- Finish with the other slice of toasted bread, buttered side down.

Serve:
- Cut in half if you like and enjoy with your can of Pepsi chilled alongside.
