Backstory: As I journeyed through the land of ancient Greece, I discovered the synergy between traditional Greek ingredients and muscle-building nutrition. This recipe is a homage to the strength and flavor of the Greek gods.
Cook quinoa according to the package instructions. Set aside.
In a large mixing bowl, combine olive oil, dried oregano, dried basil, garlic powder, onion powder, sea salt, black pepper, lemon juice, and minced garlic. Mix well to create a marinade.
Add the chicken breasts to the bowl and coat them evenly with the marinade. Allow them to marinate for at least 15 minutes to enhance the flavors.
Heat a grill pan or skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).
Once cooked, remove the chicken from the pan and let it rest for a few minutes. Then, slice it into thin strips.
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, and crumbled feta cheese. Toss gently to combine.
Divide the quinoa mixture into 4 meal prep containers. Top each portion with the sliced grilled chicken.
Garnish with fresh dill or parsley.
This Greek Chicken Feta Bowl brings together the vibrant flavors of Greek cuisine. The marinade creates a burst of Mediterranean herby goodness, while the grilled chicken remains juicy and flavorful. The combination of quinoa, cherry tomatoes, cucumber, Kalamata olives, and crumbled feta cheese creates a refreshing and tangy melody, all perfectly harmonized by the aromatic dill or parsley garnish.
