- 2 carrots, diced
- 4 cups vegetable broth

- Salt and pepper to taste
- Fresh parsley or dill for garnish (optional)
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced leeks and minced garlic, sautéing until softened (about 3-4 minutes).
- Add the diced sweet potato, parsnip, potatoes, and carrots. Stir well and cook for another 5 minutes.
- Pour in the vegetable broth, and add the chopped tomatoes, broccoli, beans, oregano, thyme, salt, and pepper. Stir to combine all ingredients.
